The changing seasons are upon us. Exit stage left – summer fruits, greens and beans; enter stage right the beginnings of early Autumn produce – the race for the first Grouse on August 12th, Paimpol Beans, baskets of foraged mushrooms including Girolles and Trompettes. Though I am writing this in mid-July, there definitely feels to be an Autumnal air outside. July has been another busy month for us here at Chef HQ. We were thrilled to join chefs Tom Booton and Alyn Williams at a fundraiser for the Bocuse d’OrUK team, held at the chefsTABLE in the North Yorkshire home of TRUEfoods. Founders of TRUEfoods, Jack and Mitch Mitchell are on a mission to spread
the word – far and wide- about our UK Bocuse team, at the same time raising crucial funds to help get the United Kingdom up onto that podium in Lyon 2025 Bocuse d’Or final. We also attended a wonderfully curated event for the semi-finalists of National Chef of the Year, held at the London Lockhart Showroom. The event highlighted the role of science and psychology in developing memorable culinary experiences. Charles Spence, renowned Professor of Experimental Psychology and Head of the Cross-modal Research Laboratory at Oxford University gave a lively, informative talk – this was then followed by
immersive demonstrations led by Chef Jozef Youssef on how this research can be applied in professional cookery.
More inspiration for the Craft Guild of Chefs Graduate Award finalists followed in the last week of July. A two-day study tour in Suffolk, visiting farmers and producers, having an opportunity to speak with mentors and specialists as they prepare for their final exams in early September – good luck to all Graduates, we hope the days away gave you food for thought and some well deserved down-time.
Much planning is underway for Chef HQ Live at HRC next March, which is very exciting. As with 2023, we will be bringing you three days of masterclasses and discussions, with typically some quirky entertainment thrown into the mix. Our theme for 2024? Well, that will be kept under wraps – you will have to be there to see it! Needless to say, our creative team are chomping at the bit, with set
building and design in full flow – we can’t wait to share it with you.
We have so much more planned for the latter part of 2023. From the publications to the most exciting series of podcasts, supplier showcases to secret suppers – it’s all going on!
