Welcome at delicious Australia Magazine September 2023 Issue

What does home mean to you? I’m thrilled to be penning my first editor’s letter for delicious. in one of my favourites – the Australian issue. For me, it’s a reminder that the country we call home means so many different things to so many different people.
For some, it’s all nostalgia and comfort- memories intertwined with the food we grew up with. For others, it’s a place still being discovered through the people we meet and meals we share. Australia is one of ithe world’s most exciting dining destinations, and it’s because our culinary landscape never stops changing, gaining inspiration from everyone that makes it home. From damper and pavlova to laksa and spag bol, this magazine issue brings you modern Australia on a plate.
It’s only right that we start by looking back to the beginning. This land is home to the oldest food cultures on the planet; cultures that were seasonal and local in a way we can only aspire to today. With recipes infused with native Australian ingredients, Rebecca Sullivan of Warndu (p 72) and delicious. contributor Nornie Bero (p 90) prove why these ancient flavours should be on every Australian table today.
Next, we travel to Melbourne to meet some of the instructors from Free to Feed – refugees and asylum seekers who share dishes from their birthplaces in the social enterprise’s hugely popular cooking classes. Having been lucky enough to take a Free to Feed class a few years ago, the generosity and warmth that pervaded that kitchen has stayed with me ever since.
Also chock-full of warm feelings is our celebration of that road-trip classic, the pie. We’ve consulted cult regional bakeries and urban pie purveyors to compile the ultimate collection (p 64). On p 54, Merrick and Georgie Watts invite us inside their beachside home for an effortless menu starring local seafood and herbs from the family vegie patch. Meanwhile, our clever food team’s ode to Australian cafe culture offers desserts inspired by flat whites, cappuccinos and Vietnamese coffee (p 98). Finally, in travel, we discover why Victorian coastal town Lorne is now as popular with avid foodies as it is for those craving sand and surf. And looking to the heart of the nation, winy Uluru should be on every wish list.
Of course, Australian food would be nothing without our incomparable produce – and that’s what the delicious. Harvey Norman Produce Awards is all about. Flip this is,sue over to meet the winners of the 2023 awards: passionate makers and growers who toil tirelessly to craft the best produce in the country, and remind us why it’s so important to #knowyourproducer.
On a personal note, I’d like to thank the brilliant Kerrie McCallum for trusting me with delicious. It’s an incredible brand with an incredible bunch of people behind the scenes, and we’re so excited to share everything we’ve been working on with you.
