AS I SIT HERE WRITING THIS LETTER TO YOU, I am celebrating a decade of living in this wonderful country that I now call home. Aside from the weather (I hail from the UK, so the sunshine will forever delight me), what led me to fall in love with Australia is the people, who I have found so brilliantly balance the expectations of daily life with making time for leisure.
This year hasn’t quite kicked off as we had all hoped, and with that in mind, we feel it’s time to turn up the volume on leisure and make daily life a little easier. This issue embodies that message, with recipes that require less prep and less washing up, but promise to deliver flavour in spades.
For midweek magic, Olivia Andrews’ quick Asian-inspired stir-frys from p 68 and Phoebe Wood’s glorious chicken dinners on p 60 will fill your homes with delightful aromas in a flash. If you’ve decided to explore plant-based eating further in 2022, Tom Walton guides you through satisfying recipes using grains and pulses from p 76, and veg queen Alice Zaslavsky’s bread salads on p 92 offer further delicious inspiration.
With ease should come comfort, and Georgie Esdaile’s one-pan pastas from p 100 show we will truly never run out of new ways with tray bakes. The hospitality scene has boomed with new openings recently, but it’s no secret that they need our support. Take a look at Bondi’s new The Depot from Guy Turland and crew on p 50, Catalan inspired La Salut on p 19 and more restaurant news from p 34, to plan where you’ll eat out soon.
